Ingredients

  • 1 pound Cooked Tagliatelle
  • 1 cup Pasta Water
  • 1 Sweet Pepper & Onion
  • 1 cup Corn
  • 3/4 cup Heirloom Cherry Tomatoes
  • 2 tablespoons Olive Oil
  • 3 tablespoons Butter
  • 1 tablespoon Cajun Seasoning (plus more to taste)
  • 1/2 cup Cream
  • 1/4 cup Fresh Oregano Leaves
  • 1/2 Lemon (Juiced)

Instructions

  1. Season shrimp: Pat shrimp dry and toss with Cajun seasoning.

  2. Hard sear shrimp: Heat a large skillet on high. Add olive oil. Sear shrimp 1 1⁄2–2 minutes without moving, flip and cook 1 minute more. Remove shrimp to a plate.

  3. Cook veggies: Lower heat to medium. Add butter, then stir in corn and tomatoes. Cook 2–3 minutes until tomatoes soften and start to burst.

  4. Make sauce: Pour in the Carbone Sweet Peppers and Onions, stir, and simmer for 3–5 minutes. Lower heat to medium-low, stir in cream, and simmer gently 2–3 minutes until smooth.

  5. Toss pasta: Add cooked tagliatelle and toss until coated and heated through. (If sauce seems thick, add a splash of warm water or pasta water.)

  6. Finish: Add shrimp back in and toss 30–60 seconds just to warm through. Squeeze in ½ lemon and fold in oregano.

  7. Serve hot with extra oregano or lemon if desired.
