Rooted in heritage
Born and raised in Queens, Chef Mario Carbone found inspiration from family — the northern elegance of his maternal grandparents and the Sicilian abbondanza of his father’s side of the family. After graduating from the Culinary Institute of America, he spent a year in Italy immersing himself in the flavors, techniques, and traditions that would then become Carbone.
Rooted in NYC
With its menu inspired by the great, NYC red-sauce joints of the past, Carbone is the place to see and be seen. Located on historic Thompson Street under the neon glow of the original Rocco sign, Chef Mario and crew serve up his award-winning fare in an anything-can-happen atmosphere. Now, you can get a taste of that magic right in your own kitchen.
